Cajeta: /kah HEH tah/ a gooey Central and South american treat similar
to caramel. Ideal for kids and uninhibited adults. Unites families by
having everyone trying to get their finger in the can.
Crock Pot Potato Soup (aka Cholesterol Fest)
prep time: 3 hours or more
serves: 4 hungry/6 polite people
This is a good dish to throw together before you go to evening classes, the nice thing about the crock pot is that you don't really have to worry about overcooking. If you won't have time to add
the spices later, toss them in with everything else at the beginning.
Equipment:
- good sized crock pot
- sharp knife
- potato peeler
- potato masher or similar smushing type object
Materials:
- 6 medium sized potatoes
- 1+1/2 cups heavy cream
- 4 cups milk
- 1 stick butter/margarine
- 1/2 tsp. sage
- 1/2 tsp. oregano
- 1/2 tsp. salt
- 1 tsp. pepper
- 2 tsp. dill
Procedures:
- Wash the potatoes, peel them, and slice into small bits.
- Toss potato bits into crock pot.
- Add cream, milk and butter/margarine.
- Turn crock pot on high, cover.
- Go do something else for about three hours.
- Uncover, add spices, Smush mixture, if level is low, add some more milk, cover again.
- Procrastinate for another hour.
- Uncover, mush until smooth.
- Serve with bread/refrigerate 'til later.

Jeff's Noodles
prep time: about 45 minutes
seves: 4 hungry/ 6 polite people
Basic, somewhat spicy, Thai noodles that come out differently every time. Add stir-fried meat and/or veggies to the final product (or if your feeling fancy, shrimp are particularly good). We have no idea who Jeff is.
Equipment:
- blender
- pot for the noodles
Materials:
- 16 oz. pkg. spaghetti noodles
- 5 tbsp. sesame tahini OR Skippy peanut butter
- 3 tbsp. soy sauce
- 3 tbsp. vinegar (preferably balsamic/rice)
- 2 tbsp oil
- hot sauce to taste
- any and all other spices that you want to add--the more the merrier
Procedures:
- Put everything other than the noodles in the blender and blend it a lot-- this is your sauce.
- Cook the noodles (add 1 tsp of oil to water to keep noodles from sticking).
- Add sauce to noodles. Throw on meat/veggies if you like.

Jenny's Instant Donuts
prep time: about 15 minutes
serves: variable
Not exactly health food, but really easy to make and really cheap.
Equipment:
- deep pan/wok
- tongs/ chopsticks/fork
- plastic baggie
- paper towels
Materials:
- 1 can of instant biscuits, the cheaper the better (ie. generic 3/$1.00 NOT Pillsbury Grands)
- 1 cup of sugar
- enough oil to fill pan to at least 1" deep (canola oil is a good choice)
Procedure:
- Fill pan with one to two inches of oil, set on medium-high heat
- Open can of biscuit dough, remove one biscuit
- Poke your finger through the middle of the biscuit dough and wiggle it 'til the dough forms a loose "O" shape.
- Using the tongs, gently lower the "O" into the pan, do NOT drop it in, unless you want to be splattered with hot oil
- Fry donut until golden brown on both sides
- Remove with tongs and set aside to cool on a paper towel
- Meanwhile, fill the plastic baggie with the sugar
- When it's cool enough to touch without getting blisters, drop the donut into the plastic baggie
- Shake to coat and voila! instant sugar donut
- Repeat until sated

Melissa's Truckstop Frito Pie
prep time: 5-10 minutes
serves: 2-3
You can pick up most, if not all, ingredients at the Texaco
Superstore near you. Some of my more uncouth friends opt just to pour the
entire saucepan of chili/cheese right into the Frito bag and munch away!
Equipment:
- saucepan
- spoon or something to stir with
Materials:
- One can chili (with or without beans)
- One medium-sized package Velveeta Cheese, cubed (with or without
peppers)
- One medium-sized package of Fritos
- One small onion, chopped (optional)
Procedure:
- Warm the chili and cheese cubes in the saucepan over medium heat until
the cheese is melted.
- Blend well.
- Place a few handfuls of Fritos on a plate and ladle chili/cheese sauce
over them.
- Top with chopped onion.

Microwave Quesadillas (Cheese tacos to you Anglos)
prep time: about ten minutes
serves: three hungry people
To add a little more flavor to this dish, try sprinkling on some tabasco sauce or salsa verde or adding cold cuts/veggies in with your cheese.
Equipment:
- microwave
- large, flat microwaveable dish
- knife
Materials:
- 1 medium sized brick of mozarella/monterey jack
- 1 12-pack of tortillas (senor juarez fajita style are the best)
Procedure
- Cut up the brick of cheese into thin slices (approx 24)
- Lay slices in tortillas, about two slices per, then fold tortillas in half.
- Microwave on high for about four minutes.
- Add some hot sauce and enjoy!

Roasted Garlic Sandwiches
prep time: about 20 minutes
serves: party!
The only way to do this is to have a garlic party, because anyone who eats this will be a social pariah for hours afterwards.
Equipment:
- cookie sheet/aluminum foil
- several other garlic-minded people
Materials:
- 20 heads of garlic
- 1/2 c. olive oil
- 1 bunch of fresh basil
- 1 pot of honey mustard
- 1 loaf of rye bread
Procedure:
- Together with your friends, separate the heads and peel all the cloves until they have about one layer of papery skin left on them.
- For grill:
A) Arrange cloves on large sheet of aluminum foil and cover with olive oil.
B) Fold aluminum foil into loose envelope with garlic inside.
C) Grill for about twenty minutes or until you just can't take it any more.
- For oven:
A) Arrange cloves on cookie sheet and cover with olive oil.
B) Bake at 350 for 15-20 minutes (check occasionally to make sure they don't shrivel up and turn black)
- Gather your friends around the mound of roasted garlic.
- Each person may now peel as many cloves as sie can and arrange them on a slice of rye with a dab of honey-mustard and a few basil leaves.
- Fold slices in half and let the frenzy commence!

Salsa Verde
prep time: about 10 minutes
serves: about 2 1/2 cups
You can usually find tomatillos in the exotic foods section of the supermarket, if not then use the canned stuff.
Equipment:
Materials:
- 8-10 tomatillos, with outer covering removed
- 1 bunch of cilantro, chopped
- 1 small onion, chopped
- 1 serrano pepper, seeded and chopped
- water
- salt
Procedure:
- Put tomatillos in saucepan, add enough water to cover, and bring to a boil.
- When tomatillos turn pale green, remove from heat.
- Put tomatillos, onion, cilantro and half of pepper into blender.
- Blend on medium speed for 2 minutes.
- Taste, add salt and if necessary, the rest of the pepper.
- Blend for another 30 seconds.
- Chill and serve, or refrigerate in an air-tight container.

Savory French Toast
prep time: about 1/2 hour
serves: variable
Breakfast for the adventurous, actually quite tasty. James says, "I don't know if it's a British thing, or just my family..."
Equipment:
- frying pan
- small mixing bowl
- fork
Materials:
- multiple slices of your favorite bread (if you don't have a favorite, sourdough is particularly good)
- 1 egg per every two slices of bread
- dash salt
- tad pepper
Procedure:
- Lightly oil pan (PAM cooking spray works well) and set on medium heat.
- In bowl, beat eggs with salt and pepper until smooth.
- Dip bread in egg mix and toss onto pan.
- Fry on both sides until golden brown and solid all the way through.
- Serve up with A-1, Heinz 57, chutney, ketchup, or the savory sauce of your choice.
